Welp. Winter has pretty much been non-existent for us. Not that you'll hear me complaining after last winter's blizzard and -7 degree weather.

I'm already looking at spring fashions even though the temps are still somewhat low. I'm not ready for white jeans and pastel tops, but I do like to add a pop of color to my cold weather outfits. My favorite way to bring some life into the endless sea of gray and black in my closet is by adding candy colored accessories. Here are some pieces that I recently ordered and a few others I want.

Pecan-Crusted Goat Cheese and Roasted Pear Salad

Through the years, I've played around with different ingredients in salads to suit our tastes. Sometimes I'll try to copy a salad from a restaurant, and other times-I just use what we have on hand in our refrigerator.

This salad is an adaptation of a salad we used to have when we lived in Memphis. Paulette's had the most wonderful mixed greens salad with fried pecan-crusted goat cheese. I'm trying to eat healthier, so I coated the goat cheese in toasted pecans and skipped the frying. The roasted pears in this salad come from a recipe I made up many years ago that has cornbread croutons, bacon, spinach, and roasted pears.

Pecan-Crusted Goat Cheese and Roasted Pear Salad

Ingredients:

Your choice of greens. I used an organic spinach salad blend.
Thinly sliced purple onion
A couple of slices of pan-fried bacon, crumbled
About a 1/4 cup pecans
Non-stick cooking spray
1 small log of good quality goat cheese
Girard's Champagne Dressing (available in most grocery stores)
1 ripe pear for each salad
Brown sugar or honey
Salt and pepper to taste

Directions:

Preheat oven to 375 degrees.
Lightly spray a small skillet with cooking spray. Heat skillet over medium heat. Add pecans. Toast the pecans for 3-6 minutes, flipping often to avoid burning.
Let pecans cool and pulse them finely in a food processor. Set aside.
Slice the goat cheese log into approximately 1/2 inch slices. If the goat cheese crumbles, don't sweat it. You can easily reshape the slices.

Lightly salt and pepper one side of the goat cheese. Press the pecan pieces onto each side. Place in refrigerator while you prepare the rest of the salad.
Place parchment paper or a Silpat pad on a baking sheet.
Peel pears and cut into wedges. Place on baking sheet and bake for about 7 minutes.
Remove from oven and turn over pears with a spatula.
Lightly sprinkle pears with brown sugar or drizzle with honey.
Return to oven and bake 5-7 minutes or until sugar starts to caramelize a bit. Be careful. These can burn easily once the sugar is on them.

In individual salad bowls, add spinach mix.
Add crumbled bacon, purple onion, pears, and 2-3 goat cheese slices.
Add salt and fresh cracked pepper if desired and drizzle champagne dressing onto finished salad.

Parenting With Love and Truth

I'm an '80s child.

Well, born in the '70s, but remember more of the '80s.

I was raised WITHOUT a silver spoon in my mouth.

My family put things in "lay-a-way" and paid for them with hard-earned cash.

I was taught that just because you're born, the world owes you nothing.

You work hard for what YOU want.

I was taught that life is not fair.

There are always people that have more than you.

But even more people will have less than you.

My parents were divorced.

I saw at an early age what a fearless woman looked like.

My mother did things for herself.

I saw my mother learn how to do the things my dad typically did.

She learned to change the oil in her car, make house repairs, and pay her own bills.

With no help.

Whatsoever.

From a man, government, or other family members.

She told me it wasn't another person's fault or the government's problem that

She and my father got a divorce.

So why should they "fix" it?

All the while, my mother remained a parent to me.

She didn't rely on me to be a confidante or emotional crutch.

She showed tough love when she needed to....which was often.

I miss the days when parents and children weren't "buds".

Parents are supposed to nurture, educate, and guide their children.

Parents are supposed to prepare their children for the world out there.

Even if it hurts a little.

I love this episode of "The Cosby Show".

Cliff (the dad) is offering his son Theo some honest advice about life.

Even if it hurts a little.

*Make sure you watch until the 3:00 mark.

Theo provides such a convincing argument, but Cliff provides even better parental advice.

Chicken Enchiladas

I usually make sour cream based chicken enchiladas, but I wanted to try something different. I stumbled across this chicken enchilada recipe from Tide and Thyme. I have to say-these are the BEST enchiladas I've ever eaten. They're so flavorful and taste "fresher" than creamy enchiladas. Here's my adaptation of her recipe. I personally don't like pickled jalapenos, so I used fresh.

*Buy good quality tortillas. I bought local yellow corn tortillas. They tasted so much better than the normal commercial brand I usually use. Plus they roll much easier without tearing.

Chicken Enchiladas

Adapted from: Tide and Thyme

Ingredients

1 onion, chopped fine
2 jalapenos, seeded and chopped fine
1 teaspoon canola oil
4 medium cloves garlic, minced
3 Tablespoons chili powder
3 teaspoons ground cumin
3 teaspoons sugar
1 15-oz can tomato sauce
1 cup water
2 Campari tomatoes, seeded and chopped, or substitute about 1/4 cup tomato of your choice
1 pound boneless, skinless chicken breasts (2 large breasts)
1 cup sharp cheddar, shredded (I used Cracker Barrel extra sharp WHITE cheddar)
1 cup shredded Monterrey Jack or Sargento's "4-cheese Mexican Blend"
1/2 cup minced fresh cilantro
12 (6-inch) soft corn tortillas
cooking spray
salt and ground black pepper

*Optional toppings: sour cream, salsa or taco sauce, guacamole, fresh cilantro.

Directions:

Preheat oven to 425 degrees.
Heat oil in a large saucepan over medium-low heat.
Add onion, jalapeno, 1/2 teaspoon salt to saucepan and cook about 10 minutes or until onions are translucent. Stir often.
Add garlic, chili powder, cumin, and sugar to the onion mixture. Stir for about 30 seconds.
Next, mix in tomato sauce, water, and chopped tomato.
Once sauce starts to simmer, cook about 5-10 minutes, or until slightly thickened.
Add chicken breasts directly to the sauce. Spoon sauce on top of chicken.
Cover and reduce heat to low.
Cook until chicken is thoroughly cooked through-about 15-20 minutes. Internal temperature should register at least 160 degrees on the thickest part of the breast.
Transfer the chicken to a plate, and set aside to cool.
Strain the sauce through a strainer into a medium bowl, pressing the onion mixture to extract as much liquid as possible. (This is the nectar of the gods. SO good.)
Transfer the onions to a large bowl and set aside.
Season sauce with additional salt and pepper to taste.
After the chicken is cool enough to handle, shred into bite-sized pieces.
Add shredded chicken to the onion mixture, along with 1/4 cup of the enchilada sauce, 1 cup cheddar cheese, and cilantro. Toss to combine.
Stack the tortillas on a plate and cover with plastic wrap or a moist paper towel; Microwave on high until warm and pliable, 40-60 seconds.
Spread the tortillas on a clean work surface, and spoon 1/3 cup of the chicken mixture evenly down the center of each. I used a 1/3 cup measuring cup and just "dipped" out the mixture.
Tightly roll each tortilla and lay seam-side down in a greased 9x13 inch baking dish.
Lightly spray the tops of the enchiladas with cooking spray.
Place in the oven, uncovered, for about 7 minutes, or until the tortillas start to brown slightly (skip this step if you don't like the crunch).
Reduce heat to 400. Remove enchiladas and pour sauce evenly on top.
Top with the remaining cheese.
Cover dish with foil, and bake an additional 20-25 minutes, or until heated through.
Remove foil and bake another 5 minutes, until cheese browns.
Remove from oven and let stand 10 minutes before serving.

*Once plated, add whatever toppings you like. Give me a dollop of sour cream and fresh cilantro, and I'm good to go!

Cinnamon Roll Casserole

You won't believe how easy this is! As always, I made changes to the original recipe and I've posted my "version". This is a big recipe, but you can easily half it.

This is an easy casserole to make and would be perfect for company. I wouldn't recommend putting all the ingredients together the night before like other breakfast casseroles. You can reduce your morning prep time by doing a little prep work before bedtime. Cut up the cinnamon rolls and put in a resealable container. Combine the whipping cream, cinnamon, and vanilla cut up the cinnamon rolls and put in another container. In the morning, proceed with the recipe and bake.

Cinnamon Roll Casserole

Adapted from: Pillsbury's Cinnamon French Toast Bake

Ingredients:

2 tablespoons of melted butter or baking spray
2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing
4 eggs
1/2 cup heavy whipping cream
2 teaspoons ground cinnamon
2 teaspoons vanilla
1 cup chopped Pecans
1/4 cup maple syrup

Garnish:

Icing from cinnamon rolls
Maple syrup (if desired) --I found it was sweet enough without it.

Directions:

Heat oven to 375°F. Pour melted butter into ungreased 13x9-inch (3-quart) glass baking dish.
Separate both cans of dough into 16 rolls; set icing aside. Cut each roll into 8 pieces; place pieces over butter in dish.
In a medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1/4 cup syrup.
Bake 20 to 28 minutes or until golden brown. Cool 15 minutes. Meanwhile, remove covers from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle.
Drizzle icing over top. If desired, spoon syrup over individual servings.

I wish I could sing. Like REALLY sing.
I love doing laundry, but despise putting it away.
I own about 75 bottles of lotions, face creams, and treatments. Oops.
I hate to wear gowns to bed. I hate that tangled, twisted feeling.
When I go to a hotel, I clean before I unpack. Lysol, Clorox wipes, the works. Then I check the seams of the mattress for signs of bedbugs. I also straighten the room before I check out. OCD much?
I am a loyal friend to a fault.
I can cook Southern AND Thai food like nobody's business.
I have a twisted sense of humor that few people "get". If you truly get it, we'll be friends for life.
Twitter and blogging have changed my life.
My idea of a vacation involves sun, sand, and lots of sleep.
I love "The Real Housewives of Beverly Hills." I watch all those hot messes every week.

My Fitness Pal and Healthy Eating

I didn't grow up eating healthy. Sure, my mom made a meat and vegetables at most meals, but often they were fried or had a lot of butter. Luckily, I was blessed genetically with thin parents and never had to worry about "weight" or dieting.....until the past few years.

Yeah, I know....I'm not overweight. But I know that I'm not as healthy as I could be. I'm only 5'3" and 10 extra pounds on me makes a BIG difference. Since my hysterectomy in May, I haven't really exercised. There, I said it. I was working out 3-4 days a week before my surgery. I have made a lot of excuses. Like the saying goes, "You make a way or you make an excuse."

I start physical therapy on my knee this week, and I'm actually excited. I'm excited that I'll be in a safe environment to rehab my knee instead of at the gym doing Lord knows what trying to keep up with the 20 year old on the treadmill next to me. Please tell me y'all "compete" with the person next to you on the treadmill or elliptical. Oh, okay maybe that's just me. LOL

Back to my diet.....after all the buzz on Twitter about the "My Fitness Pal" app, I've religiously started using it. If you haven't heard about it, here's the website. It's the easiest way I've found to journal my food. Now I'm thinking about every.single.morsel I put into my ~~piehole~~ mouth. Give it a whirl. Best of all, it's free.

Here's a few things I've been eating. I'm really trying to stay away from food in boxes or packages. In other words, I'm aiming for "whole" fresh foods.

This recipe includes homemade dough. It was my first time making my own pizza dough.

This is by FAR the best bbq chicken pizza I've eaten.

I used organic chicken and organic bbq sauce (recipe calls for you to make your own).

Here's the link. I also used the same ingredients and made BBQ chicken quesadillas.

You talk about F-I-N-E! Mmmmm.

I am not a fan of plain Greek yogurt, but I love flavored Chobani.

Mango is my favorite and I add almonds or flax seeds.

Christmas Decor

Hi Friends! I hope you all are enjoying this holiday season. My girls are out of school and we're having fun at home making cookies and gingerbread houses. Awhh. Who am I kidding? They're fighting like cats and dogs and we're staying in pjs and sweats all day.

I did, however, manage to get my house decorated. Here's a few pics around the house.

This is our family room off the kitchen. Since this is the room where we spend the most time, I like to do something fun for the girls. I usually rotate themes and do either a Santa, snowman, or candy-themed tree. This year, we *kind of* went over the top with the candy theme.

I already had a lot of the decorations and ornaments, but added some cute gingerbread and candy ornaments that I found at JCPenney.

The cupcakes on the mantle and the lollipops I used for the tree topper all came from JCPenney.

I found a little inspiration from Pinterest and did this for our front door

using Deco Mesh and more candy ornaments from Hobby Lobby.

I already had the ribbon and red and white ball garland.

I usually do something ~~less gaudy~~ more natural, but heck, my kiddos are young. Why not make it fun?

This is my first year doing a tree in my entry way. It's been a challenge finding one "skinny" enough.
Believe it or not, I bought this beauty at Wal-Mart.

I made my topper out of the leftover burlap ribbon I had from my fall wreath project.

I reuse the same stuff over and over. That's how I roll.

All my drapes, furnishings, and Christmas decorations came from my previous houses.

Buy what you love and you'll have it a lifetime!

Yes! You can mix silver and gold together. You can also mix pine cones and burlap with "fancy" ornaments.

Dining Room

Once again...I used items around my house to decorate. I pulled out a big copper bowl from the basement and started stuffing it with pine branches and twig balls. I tossed in an antler and a magnifying glass from the coffee table. Next I added some sparkly ornaments. Somehow it all works in my dining room!

Here's the view from my foyer into my formal living room.

I usually put a tree in there, but opted to do one in the entry way instead.

I attached some green ornaments to the boxwood topiary and tied a ribbon on the trunk.

In the living room bay window, I added silver ribbon to large snowflakes and attached them to the window frames.

This secretary is at the other end of my formal living room.

I found these cute snow village houses at Marshall's for $12.99 each.

They're made of cardboard, but have a battery powered light inside.

Ginger Garlic Shrimp Stir-Fry

This is a quick and easy recipe. There's no veggies to chop (unless you prefer fresh), and you can easily substitute chicken instead of shrimp.

Ginger Garlic Shrimp Stir-Fry

4 servings

Ingredients:

3/4 cup canned chicken broth (less-sodium)
3/4 cup Soy Vay Veri Veri teriyaki sauce
3 teaspoons of corn starch
2 teaspoons sesame oil or fire sesame oil
1 lb bag frozen broccoli stir-fry mix (I used Birds' Eye brand)
1 lb raw, peeled and deveined 30-40 count shrimp, thawed if necessary (I used frozen) OR boneless chicken pieces
2 tablespoons "Gourmet Garden" ginger spice blend (in a tube in the produce section)
1 tablespoon "Gourmet Garden" garlic spice blend
Jasmine Rice, cooked according to directions on bag

Directions:

Whisk together chicken broth, teriyaki sauce and corn starch in a small bowl. Set aside.
In a large non-stick skillet or wok, heat oil over medium-high heat.
Add frozen stir-fry mix and stir frequently, about 4-5 minutes. Be careful to not overcook.

Add shrimp, garlic, and ginger and stir-fry for about 3-4 minutes or just until shrimp is opaque throughout.
Stir teriyaki mixture and pour into skillet. Bring to a slight boil. Boil about 2-3 minutes or until sauce is slightly thickened and shrimp and vegetables are thoroughly coated.

Serve over cooked rice.

Mediterranean Sandwich

A while back, I posted a Mediterranean Omelet recipe that had fresh spinach, tomatoes, and feta cheese. I love to combine spinach and tomatoes and make different dishes. Today I made a sandwich but roasted the tomatoes and left the spinach uncooked.

Mediterranean Sandwich

Ingredients:

Sweet cherry tomatoes, rinsed and sliced in half and drained on a paper towel
Fresh organic spinach-about 1/2 cup rinsed and drained on a paper towel
About 1 tablespoon-Fresh basil, chopped
Shaved Parmesan cheese or cheese of your choice
Prepared Pesto from a jar
Fresh local whole grain bread
Good quality olive oil
Kosher salt
Fresh ground pepper

*Optional- Scrambled egg whites

Directions:

Preheat oven to 350 degrees. If you have a "roast" setting, use it to roast the tomatoes.
Place sliced tomatoes on a baking sheet. Drizzle with olive oil and sprinkle with Kosher salt and pepper.

Cook about 2-3 minutes, then flip the tomatoes on the other side. Cook for a few more minutes. Be careful, these will burn quickly.

Layer spinach and tomatoes on one-half of your sandwich.

Add chopped basil and shaved Parmesan. Spread pesto on other slice.

You can also add scrambled egg whites to make a breakfast sandwich or just to add more protein.

Add salt and pepper to taste.

My family hasn't been diagnosed with celiac disease or gluten-intolerance. But after reading the book "Dangerous Grains", I'm always looking for ways to cut wheat and grains out of our diet.

Our local health food grocer didn't carry the same brand gluten-free cake mix that "Bees and Bows" used, so I improvised with another brand that I love, Pamela's Products. I regularly use Pamela's Products Baking and Pancake Mix to make pancakes and it's YUMMY.

Here's how I adjusted the recipe because of the difference in volume of the cake mix:

Gluten-Free Pumpkin Chocolate Chip Cake
Adapted from this recipe: Namaste Food, LLC

(not sure why it looks "shiny". It doesn't look like that in person)

Ingredients:

1 package of Pamela's Products Gluten-Free Vanilla Cake Mix
3 eggs
1 cup of pureed pumpkin
1 cup of chocolate chips
2/3 cup water
1/2 teaspoon gluten-free pumpkin pie spice

Directions:

Preheat oven to 325 degrees.
Spray a bundt pan or 9x13 pan with nonstick cooking spray.
In a large mixing bowl, combine cake mix, eggs, pumpkin, pumpkin pie spice, and water. Add chocolate chips.
Pour mixture into pan.
Bake 25-30 minutes and check for the center with toothpick. Continue baking until toothpick comes out clean and top has thoroughly cooked. It took about 40 minutes with my oven.

The second item on my list is a teasing hair brush that I bought from my hair stylist. I got my hair trimmed on Monday and asked for some shorter layers on top. I ~~wanted~~ needed more "poof" in my crown. (Don't we all?)

When the stylist started my blow out, she pulled out a teasing brush and with a few flicks of the wrist, I had some SUR-E-US poofage. The poof stayed and I bought--especially since I already have a drawer full of teasing combs and 3 teasing brushes that don't work very well.

Here's this little gem. It's "The Little Wonder" by Spornette.

I really do like this better than my other teasing brushes.

I don't know if it's because the pink tips are more "textured" or if the design of the brush is different.

You can pick up the "Little Wonder" at Sally's or Ulta.

Also, do a search on Youtube, there's several videos showing how to "poof" your hair using this brush.

Let's Get Physical

I'm in a serious physical rut. Prior to my surgery, I was strength training, doing cardio, and yoga 3-4 times a week. In the past few months, I haven't been doing much of anything.

I'm not sure what happened. I was so gung-ho the first few weeks post-op. I was skerting and walking like a fool around my neighborhood. I was HAWT, all hunched over in my abdominal binder. Sexxah, I tell you. Since then, I've gone to the gym a few times and barely broke a sweat with my pathetic workouts. Then I leave and bust up in Baskin-Robbins on the way home.

I think part of the reason I've been so lax in my workouts is because physically AND mentally I have felt like a poop sandwich. I went to see my surgeon last month and told him that I just wasn't feeling "right". Let me re-phrase that...I broke down crying when he walked in the room and said "How are you?"

The poor guy probably said, "Oh hawl no. Let me get out of here." But thankfully he didn't. He came over and gave me a hug while I told him that I thought I'd feel SO much better by now.

He reassured me that it takes the body quite some time to recover from a major surgery. Top that off with hormone imbalances and how they affect mood and energy levels, and you have a "Cuckoo for Cocoa Puffs" lady in your office snottin' on your lab coat.

Long story short...saliva tests determined my hormone levels were really low, so I'm now talking bio-identical hormones. I'm also taking a plethora of supplements-Vitamin D, adrenal support, iodine, Omega-3, melatonin, and Magnesium. "Woo-hoo" for swallowing horse pills.

It's been a week, and even though my energy level is increasing, I feel like I'm experiencing PMS x 1,000. Weepy and Short-tempered would describe me. I could totally be one of the Seven Dwarfs with my mood swings.

What to do? I'm going to give it some time. My doctor said that we would probably have to tweak my hormones to find my right dosage. Kinda like a sleep number bed, I suppose.

In the meantime, I'm going to summon up some motivation to get my butt back in the gym and resume my mainly Paleo diet. I KNOW I'll feel better, and I know y'all are tired of hearing about my hormones and such.

TIP CHECK APP FOR IPHONE- I usually figure up gratuities in my head, but a few times when I've left a restaurant or hair salon, I realized that I miscalculated. Once by A LOT. Luckily it was a mistake in favor of the service provider. Tip Check is a free app for iphone and it is SO easy to use. You can even enter tax and if you are splitting the check with others. You can also specify the different types of services.

HEYTELL-I need Heytell rehab. It's basically an instant voice messaging app. I love hearing my friends' voices every day. Here's a demo.
SEEJANEWORK.COM- The wannabe organizer in me loves this website. I like that they do office or space "vignettes" with the products.

Shortcut Southern Green Beans

When I was growing up, we would get fresh green beans from the farmers at the local courthouse square or from my grandparents' garden. My mom, grandmother (Nanny), and I spent lots of evenings outside in old Adirondack chairs, "breakin' and stringin' beans" and swatting off mosquitoes. To prepare, my mom would fry up minced onion and a piece of bacon in the pot, then add the green beans and water. Talking about some good green beans! Everything's better with bacon right?

I don't always have time to go through the whole stringin' and breakin' process, so through the years, I've found a pretty close substitute with canned green beans. YES. Canned whole green beans. You have to use whole. Don't get the cut green beans. Or the French-cut kind. Yuck. Those are for the soupy green bean casseroles.

Shortcut Southern Green Beans

Ingredients:

2 cans of Del Monte FreshCut Whole Green Beans (1 can drained)

1 tablespoon finely minced onion

1 piece of smoked bacon, cut into 4 pieces

Salt to taste

Directions:

In a medium pot, over medium-low heat, add bacon pieces and saute for a few minutes. They don't have to be totally done. Be careful so it doesn't burn. Flip bacon pieces and add onion. Saute until onion is translucent.

Add both cans of green beans. Cook for 10-15 minutes or until bubbling slightly. You can remove the bacon or leave it in to serve. Salt to taste.

Parenting and Such

Phewww. I had a rough Mommy day yesterday. I'm not sure what was going on with my youngest (Sassypants), but I ended up in tears on the drive to school.

Her behavior is greatly affected by the foods she eats. If she eats the foods she allergic to, she gets really whiny and defiant. She's getting to bed at a decent time, so I feel she's not overly tired. I need to double check with her school to see if she's getting some sort of corn syrup or food dyes.

The trouble I run into is I can be a "reactionary" parent. In other words, the more my kids try to gain control, the more aggressive I get. Not in a violent or physical way, but I raise my voice and yes, often act as childish as they do. I think we both feel so out of control at that point that nothing fixes the situation.

I had to pull out a wonderful parenting book yesterday and re-read some chapters.

Are you a parent and have threatened, given time-outs, punished, spanked, bribed, yelled, etc. and aren't getting positive results? Do you feel defeated after an hour of struggling to keep your child in a 5 minute time-out?

Or have you done like I did yesterday?---yelled and threatened, knowing that nothing positive came out of it. If so, I highly recommend this book.

The author, Amy McCready is the founder of Positive Parenting Solutions, Inc. and gives incredibly empowering tips on how to regain a sense of peace between parent and child.

I love that the author suggests that we treat our children with respect. So much of the behavior solutions are temporary on "Super Nanny" and similar tv shows. I remember seeing where the nanny told a misbehaving child that she was naughty and to sit in the "naughty spot".

Is that really constructive? I tried the whole time-out thing many times and it didn't work. Instead I felt like my children believed that they were naughty and need to continue that type of behavior. After all, they had the title of "naughty" to live up to.

This morning was much better. I got the girls up in plenty of time to spend some one-on-time with each of them. Parenting......the toughest job on Earth.

Enough of the intense stuff. LOL

My girls love this sing along book and CD by Lisa Loeb. It's titled Lisa Loeb's Silly Sing-Along: The Disappointing Pancake and Other Zany Songs

Our favorite songs are "The Disappointing Pancake" and "A Co Di By Doze (A Cold in My Nose)".
My only complaints: On the song "Found a Peanut", she talks about choking on a peanut, dying, she went to heaven, and was turned away. She said she "went the other way". Luckily she says she wakes up from a dream. Catchy tune, but I usually skip this song.
"Sippin' Cider" talks about how a boy and girl where sitting cheek to cheek sipping cider. Something happens and the straw slips and then they were "lip to lip". Then she says that got her a mother-in-law and a bunch of kids that call her "Ma". I skip this song too.

Hearty Three-Cheese Lasagna

First off, this recipe isn't "exact". The amount of sauce you'll use depends on how big your pan is or whether you divide it into two pans. Remember to keep an eye on the amount of sauce you have while you're layering. The first time I made this, I made it with 1/2 the sauce and ran out on the last layer. With this recipe, I sometimes will have a little left over. Put it in a freezer box and you'll have a nice spaghetti sauce for later!

Secondly, this is a time-consuming recipe. This lasagna is really a labor of love. You can make the sauce the day before ( I always do), then layer the ingredients the next morning, and bake that night.

There's carrots and spinach in it, but don't let it throw you off.

The carrots are in the sauce and practically unnoticeable.
Shhhhh. I'm always looking for ways to sneak in some veggies.

Hearty Three-Cheese Lasagna

Ingredients:

Sauce

2 tablespoons olive oil
2 cups finely chopped onions
1 cup finely chopped peeled carrots
4 tablespoons minced garlic
16 ounces lean ground beef
12 ounces spicy Italian sausages, casings removed (i.e. squeeze the meat out of the tube. hehe)
(2) 28-ounce cans crushed tomatoes with added puree
1/2 cup tomato paste
1/2 cup chopped fresh basil
2 tablespoons dried oregano
2 tablespoons light brown sugar
1 teaspoon dried crushed red pepper

2 bay leaves

Lasagna

Lasagna noodles (depending on pan size and if you are dividing into 2 containers-about 9-15 noodles)

(2) 15-ounce containers part-skim ricotta cheese

1.5 cups grated Parmesan cheese
1 10-ounce package frozen chopped spinach, thawed, drained, thoroughly squeezed dry with paper towels
2 large eggs

5 cups grated mozzarella cheese

Directions:

Sauce

In a heavy large saucepan over medium heat, heat olive oil. Add onion, carrots and garlic; sauté until softened, about 10-12 minutes. Add beef and sausages to pan. Saute until thoroughly cooked, breaking up meat with back of spoon (approximately 7-10 minutes).

Add remaining sauce ingredients. Cover and simmer until flavors blend and sauce thickens, stirring occasionally, about 30 minutes. Discard bay leaves. Cool.

Lasagna

Preheat oven to 350°F.
Cook noodles according to package directions in large pot of boiling salted water until almost tender. Drain and cover with cold water.
Combine ricotta and 1cup Parmesan cheese in a medium bowl. Mix in spinach. Season to taste with salt and pepper. Mix in eggs.
Drain pasta and pat dry. Spread about 1 cup sauce over bottom of glass baking dish (13x9-inch or larger).

Place 3-4 noodles over sauce, overlapping to fit.

Spread half of ricotta-spinach mixture evenly over noodles.

Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture.

Spoon 1 1/2 cups sauce over cheese, spreading with spatula to cover.

Repeat layering with noodles, ricotta-spinach mixture (reserve some if you want to dollop it on top), mozzarella and sauce.
Arrange remaining noodles over sauce.
Spread remaining sauce over noodles.
Sprinkle remaining mozzarella cheese and Parmesan cheese evenly over lasagna. Lightly pat down with your hand to even the mixture.
If desired, put a few dollops of the ricotta-spinach mixture on the top.

(Can be prepared up to 1 day ahead. Cover tightly with plastic wrap and refrigerate.)
Cover baking dish with aluminum foil, being careful to slightly "tent" foil so that melted cheese won't stick to it.
Bake lasagna 40 minutes; uncover and bake until hot and bubbly, about 40 -50 minutes.
Let lasagna stand 15 minutes before serving.

**You really could divide this recipe into two pans. I usually do this because by night 2, we're sick of lasagna. This is A LOT of lasagna, especially for a small family. Just set out two pans and divide it as you go. Measurements do not have to be exact!

You can see here that I divided it up between 2 pans.
One for dinner and one to share or freeze.

Throw on more mozzarella if you like. Nobody's looking;-)

Folks, I'm struggling.

I'm struggling with my health and my self-image.

Since my surgery, my body has changed in so many ways.

If you're a guy or squimish...move on because I'm going to lay it all out.

I have a scar that goes from hip to hip.

I have a 2 scars above that.

2 more below that.

I have a scar over my belly button.

I have a scar over my right breast.

Since my surgery, I cough constantly. I'm on about 11 medications.

Steroids, inhalers, reflux medications, cough suppressants....you name it.

I'm a mess.

I don't feel pretty or sexy.

I don't want my husband to see my body.

My hormones are out-of-whack.

I'm emotional.

I'm short-tempered.

I cry sometimes.

I look at all my scars and I want to cry....and often do.

I've gained weight because I've not had the strength to exercise since May.

I make excuses to not exercise even a little. Even though I could.

My clothes don't fit and often hurt my scars.

This weekend my husband gave me an extremely genuine and thoughtful compliment.

I dismissed him. Said it wasn't true.

He looked hurt and said, "Do you honestly think I'd lie to you?"

Wow. Eye-opening.

So how do you get past an illness or surgery?

I know it takes time physically,

but emotionally--how do you get past what your body has gone through?

Burlap Wreath

Yesterday I saw lots of pics of gorgeous burlap wreaths on Pinterest. However, most pictures were linked to wreaths for sale on Etsy and didn't give directions on how to make them. $70 for a burlap wreath? Um. No ma'am.

I thought, "How hard can it be?" So off to Michael's I go. I found some burlap garland at in the wreath-making supplies, but you could easily cut strips of burlap fabric. I'm all about saving some time, so I decided to use the garland. I also looked at the wreath forms and figured I'd just use a stretched out metal coat hanger and thread it through the burlap to form a "wreath".

Supplies Needed:

2-3 rolls of burlap garland (Michael's). I used 2, but I think 3 would be better.
Metal coat hanger-stretched out and formed into a circle
Decorations such as ribbon, ornaments, dried flowers, etc.
Floral wire or hot glue to attach decorations
Wreath hanger

Directions:

Stretch out the metal coat hanger and form into a circle.

Started folding burlap garland accordion-style about every 2-3 inches. This doesn't have to be exact.

Once you've finished the folding the roll, secure with a rubber band. This makes it easier to work with and "trains" the burlap into the desired shape.

If you notice in the picture below, I'm sitting with part of the hanger UNDER my leg to stabilize the it. This makes it a lot easier to manipulate the burlap onto the hanger. The hanger will have a "C" shape.
Start threading the burlap onto the hanger.
You don't have to be precise (i.e. thread it in the same spot for each fold or make it 2-3 inches each time).

Another tip: Leave about 6 inches free at the end of the hanger (see below) . Use that length like a needle to push through the middle of each fold. Once it's "full", push the fabric down to allow for more threading.

Keep threading until you finish the first burlap roll, then continue with the second and/or third roll.
Here's the fun part....twisting the ends of the hanger together to form a circle. This might be where you bat your eyelashes and ask your husband or boyfriend for help:-) Be careful when twisting. The ends of the hanger can be sharp.
Once the ends are twisted, fluff the burlap and continue to shape the hanger into a circle until you are satisfied with the shape and fullness.
TA-DA! Pretty cool, huh? I love how organic and versatile burlap is. However, I SHO' NUF DON'T like how stinky it is. And that, my friends, is why it will go outside.

Key Lime Pound Cake

This is a recipe that I've had for a while. I tore it out of a magazine, but can't find the source. So if you are Bonnie Boland....I want to give you credit for the most incredible Key Lime Pound Cake recipe. It is WONDERFUL.

This isn't an easy cake to make. You don't just dump everything into a bowl, mix, and throw into a cake pan. But don't let it intimidate you. If you have a little time and patience, you will be rewarded with an unbelievable cake that will impress even the pickiest of eaters. The key lime flavor isn't overpowering either.

KEY LIME POUND CAKE

Adapted from a recipe by Bonnie Boland

Makes 1 (10 inch) pound cake

INGREDIENTS:

Nonstick baking spray with flour
1/2 cup unsalted butter, softened
1/2 cup Crisco all-vegetable shortening
3 cups of granulated sugar
6 large eggs, yolks separated from whites
3 cups of sifted cake flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream
2 tablespoons lime zest (not key limes, just the regular ones)
1/2 cup Key lime juice
Garnish: confectioners' sugar, lime twists, raspberries

DIRECTIONS:

Preheat oven to 325 degrees. Spray a 10-inch tube pan with nonstick baking spray with flour.

In a large bowl, beat butter and shortening at medium speed with an electric mixer until creamy.

Gradually add granulated sugar, beating until fluffy.

Add egg yolks, one at a time, beating well after each addition.

In a large bowl, sift together cake flour, baking soda, baking powder, and salt. Gradually add flour mixture to butter mixture. Alternate adding flour mixture with sour cream, beginning and ending with flour mixture. Beat well after each addition.
Add lime zest and juice, mixing well.

In a separate large bowl, beat egg whites at high speed with an electric mixer until stiff peaks form.

Gently fold egg whites into batter until well incorporated.
Pour mixture into prepared pan.

Bake for 1 hour and 30 minutes or until a wooden tooth pick inserted in center comes out clean.
Let cake cool in pan for 10 minutes.

Remove cake from pan, and cool completely on a wire rack. Dust cake with confectioners' sugar. Garnish with lime twists and raspberries, if desired.

**I think I may make a key lime glaze to drizzle on this. I'm guessing about a cup of confectioners' sugar mixed with 1/4-1/3 cup key lime juice would be good. Play with it and see what consistency and sweetness you would like.

I'm slowly trying to get back to blogging. I've had several of you ask where I've been and I really appreciate you saying you've missed my blog posts. Not sure if anyone is still out there, but here goes!

*Let me preface this post by saying ALL products that I review or recommend are items I have purchased with my own money. I feel that readers cannot get a truly honest product review when items are gifted to reviewing bloggers. I have never and will never accept items from companies to "review". This is a personal opinion.

Let's get to the trivial stuff, shall we?

I had never used Rimmel brand until recently. I saw some of the products used in makeup demonstrations on Youtube, and thought I'd give it a whirl. I have to say, I'm really impressed with the quality and wearability of all the Rimmel products I've tried so far.

I am on my second tube of Glam'Eyes and 3rd Exaggerate pencil.

Yeah, that's how much I love these two products.

I use both the black and brown in the eye liner pencil.

It is waterproof, and really does stay all day.

The Glam'Eyes mascara gives you very dramatic, separated lashes.

So many mascaras clump up and make your lashes look like

spiders are fighting on your eyes.

And gurlfrand, don't get me started on all the flaking that happens with clumpy mascara.

I've had no problems with flaking with Glam'Eyes.

Curl your lashes, apply, then wait for people

to ask if you are using Latisse or have eyelash extensions.

Rimmel Lasting Finish 25 hour Foundation in Soft Beige-200

I am in LOVE with this foundation! It truly lasts all day, and the finish is lovely.

If you're looking for a long-wearing matte finish,
this would be the perfect foundation for you.

I don't wear this every day,

but love it when I'm going out
or will be working all day and don't have time for touch-ups.

For everyday use, I've been wearing Revlon PhotoReady Makeup in 004 Nude. It's dewy with a bit of shimmer in it, so if you prefer a matte finish you would need to set it with a powder.
I use Make Up For Ever HD High Definition Powder and really like the flawless finish I get by using both products together.

Maybelline Expert Wear shadow in "Tastefully Taupe" has been

my "go to" cheap shadow for the past few years.

It has a nice pearl finish without looking like a disco ball had a baby with Ecstasy.

I picked up this NYX Eyeshadow combo in "Rock and Roll" at Ulta the other day. LOVE it.

If you haven't tried the NYX brand, I highly recommend it. I really love the quality of their shadows.

These are Rimmel Lasting Finish lipsticks.

I like vibrant lipsticks and think both of these colors would look good on most everyone.

Hard Candy "Glamoflauge" Concealer

I love really nice clothes, shoes, and purses, but this small town girl loves shopping at Target and Wal-Mart. I've never had a problem busting out a Wal-Mart blouse with a pricier pair of shoes.

My good friend Natalie loves a bargain just as much as I do, and she was telling me about how great Hard Candy's "Glamoflauge" concealer. So of course, I had to pick some up the next time I was at Wal-Mart.

I have had some crazy hormonal breakouts that are leaving behind hyperpigmented spots (don't you just love those?). I've tried covering them up with Dermablend and Laura Mercier "Secret Camoflauge" (my long-time favorite concealer). They've worked pretty well, but I could still see remnants of the pigmentation showing through.

The "Glamoflauge" concealer pulls no punches. It's labeled as a "heavy duty" concealer. Yes, it's thick, but it's really blendable. It comes in 3 colors, "Light", "Medium", and "Tan". Medium matches me perfectly.

I highly recommend "Glamoflauge" if you need a full coverage concealer.

The best part---it's only $6.00 at Wal-Mart.

Hi friends! I've missed blogging and communicating with everyone. I had a minor setback with an infection and had to do several rounds of antibiotics. I'm finally getting back to a "routine" and my energy level is increasing. I sincerely appreciate all the supportive comments and tweets you sent me. You all are so sweet!

Anywho....with all the time recovering in bed the past few weeks, I've had a lot of time to look down at my ghost white legs. They are SKURRY white. I'm not a "tanner", so I depend on using self tanner and bronzers to get a summertime glow.

There's several self tanners that I like and have used for several years now. Sun Labs and St. Tropez are the brands that I find myself buying again and again. They're both tinted, so I wear disposable gloves when applying to avoid brown palms.

After watching one of my favorite beauty guru's self tanner suggestions, I decided to try "Faux Tan" by Bare Escentuals. I can't believe I didn't think of using a bronzer or Kabuki brush to apply self tanner before seeing Emily's video.

I ordered the same kit from QVC, and have been really pleased with the results. I can see the biggest difference on my feet and ankles. No matter how careful or how much I moisturized PRIOR to applying self tanner with my hands, I still had some streaks. The brush application takes care of that problem! I'm sure you can use a Kabuki brush along with your own tinted self tanner.

You will still want to apply a light lotion to the tops of your feet, ankles, around your wrists, knees, and elbows before brushing on the "Faux Tan".

An Update

Thank you all for the sweet messages, comments,

and tweets you have sent me over the past week.

I'm doing well. My surgery didn't go as planned, and I had a really bad recovery room experience. I had hoped to have my hysterectomy laparoscopically, but the surgeons found some issues once they started and made the decision to do an "open" procedure.

I knew that it was a great possibility, but a small part of me hoped to wake up in recovery and hear "The surgery was a breeze. We didn't have to open."

Instead, I found out the news and then spent 3 LONG hours in the recovery room in agonizing pain. I remember BEGGING for pain medication. It took 10 hours from the end of my procedure until I got adequate pain relief. Needless to say, I am very upset with my anesthesiologist and nurse anesthetist for choosing not to medicate me because they were afraid of bleeding issues. I do not recommend getting an abdominal hysterectomy "Rambo style".

The nursing staff and my surgeon....that was another story. I was so pleased with my hospital stay and LOVE my doctor. It was better than any experience, including the maternity suites after I had my girls. It was the short-stay nursing staff that FINALLY listened to me and got my pain under control.

After 2 nights in the hospital, I returned home. Every day is getting a little easier, and emotionally.....I am great. I was so worried and torn before the surgery, and now at a week post-op, I'm at total peace with my decision.

Please continue to pray for healing for me and blessings for me sweet family that has taken such good care of me.

Well, tomorrow is the day.

I'm saying it....I'm having a hysterectomy.

I had to fight back tears

as I read that old post from October 2009.

I've put it off for a year and a half, but it's time.

My feelings from my previous post are still the same,

if not magnified.

I'm not going to lie, I am extremely sad and scared.

I couldn't sleep last night.

I've cried all day long for a week now.

It's so easy to say

"It's just an ORGAN in your body."

If you're a woman,

you know your uterus is so much more.

So anyway, I'll be taking a break to

take care of myself and my family.

Let's Talk About Skincare, Part 2- The Extras

Sorry for the delay in getting this second post up. It's been a challenging week, but I'm back and ready to talk about skincare!

This is Part 2-"The Extras". I'll be talking about the "extras" I use to treat problem areas and breakouts. I'll also tell you about the "big gun" products and treatments that I have tried.

The Extras

Bio-Oil: I've been using this for about 4 years now. I dab this on dry spots or post breakout marks. I have some on my night stand for my hands and cuticles. Love this stuff! It's also good for stretch marks and for pregnant tummies.

Boscia Luminizing Black Mask- I use this mask once or twice a week on my face, neck, and chest. Like many other reviewers have said, "It's like a big Biore strip for your face." Be careful and don't get this on your eyebrows or too close to your hairline. If you do, then you can easily have a hair removal session. "Kelly Clarkson!!!"

Ole Henriksen "Truth is in the Eyes" Eye Peel- Yes, you read that right, "eye peel". This is a mild eye treatment with glycolic and lactic acid. I've read many times that no amount of moisture will improve dark circles and deeper lines around the eyes. Supposedly, you have to thicken the collagen to reduce the appearance of dark circles and lines. Retinoids and acids are proven to thicken collagen if used consistently.

I use this in the morning and night. The directions say to use it at night, but I do both.

Hydrocortisone and Bandaids- I use these for unexpected breakouts. You know those big, honkin' chin pimples? My former dermatologist told me about doing this. I have gone in before to have a cystic pimple injected with hydrocortisone. It hurts like a mother trucker. Sore pimple and a needle jammed in it.....good times I'm telling ya. But it really is a miracle worker when it comes to big event/monster pimple combo we all have had. Here's what you do at bedtime: wash your face with a mild cleanser, pat dry, and squirt a pea-sized amount of hydrocortisone cream onto your finger. Apply to the breakout and cover with a bandaid. Leave on all night. It really does help reduce the swelling and redness.
Neosporin and Bandaid- If you're a skin picker, I recommend using this after you've done your damage. Use it the same as the hydrocortisone/bandaid combo. Neosporin will kill the bacteria on the surface of the open pimple.
Visine eye drops- Good old Visine. It's not just for your eyes. Get the basic formula, not the allergy AC or whatever it's called. Put a few drops on a cotton swab and hold on a pimple for 30 seconds to a minute. It helps reduce swelling and redness.
Peter Thomas Roth "Unwrinkle Peel Pads"- I use these a few times a week at night before applying Retin-A. WARNING: Don't do this if you have not consistently used acids and retinoids. I've used strong products for 20 years. My skin is very accustomed to these type products. Oftentimes, before a laser treatment or peel, estheticians and/or plastic surgeons will have you "prep" your skin with retinoids or acids. An esthetician told me that she preps her skin with a mild acid before using her nightly Retin-A. She said it improves the efficacy of Retin-A by sloughing off old skin cells and provides an even surface for the retinoid to work.

You wash your face, wipe your face and neck with the pad, leave on a few minutes, and rinse. I pat my face dry, then brush my teeth, etc. before applying Retin-A Micro.

Let's Talk About Skincare (Part 1)

The Basics

A little history behind my obsession with skincare:

My skin is oily and I've had issues with breakouts since I was 13. My teenage years were spent using tubes of "Oxy" 10% benzoyl peroxide acne treatment. That's all that was on the market ~~when the dinosaurs ruled the earth~~ at that time. Little did I know....I am very sensitive to benzoyl peroxide, and it can actually make my break outs worse.

As a teenager, I'd spend my summers tanning to "dry out" the pimples. In the winter, I'd pack on more makeup than Christina Aguilera to cover up the massive breakouts. Sounds sexxah, huh?

I found a wonderful dermatologist in my early 20s that educated me about acne and how it's related to hormones, cell turnover, and even diet. He also encouraged me to start an anti-aging regime, even though I wasn't "old".

I won't go into all the acne meds I've taken through the years, but I will say that I've used some form of retinoid (Retin-A, Retin-A Micro, Tazorac, etc.) for 20 years now. If you have the time, do a little research on retinoids and their ability to build collagen. Prescription strength retinoids are truly the gold standard in anti-aging.

If you ~~haven't started snoring yet~~ have read this far,

here's "The Basics of my skincare routine:

Morning:

Cleanser: Clarisonic Brush with Johnson's Baby Shampoo. I started using baby shampoo on my face after I asked a ageless and gorgeous 60-year-old woman what products she used. She told me she'd been using baby shampoo on her skin for 40 years. SOLD. I alternate using Johnson's with MD Forte Facial Cleanser. This stuff is strong. It's 20% glycolic compound, so you have to work up to it. I put it on my dry skin, let sit for a minute or so, then add water and cleanse.
Serum: Skinceuticals Phloretin CF Broad Spectrum Treatment. I could talk about free radicals all day, but I won't bore you. This serum compound contains vitamin C and phloretin and has changed my skin tone dramatically. It's not cheap, but my bottle has lasted almost a year.
Treatment: Dermaquest Skin Therapy Peptide Mobilizer . Also pricey, but you can find coupons online all the time or even try eBay. My esthetician told me about this product. They don't even sell it at the salon, so I know her endorsement was not sales-based. I've read a lot about the use of peptides in tissue regeneration and its ability to reverse sun damage and aging. I rotate this treatment with MD Forte Facial Lotion III (30% glycolic acid).
Protect: John Masters Organics SPF 30 Natural Mineral Sunscreen . I recently started using this sunscreen because it contains no dimethicone or parabens. So far I like it pretty well. It does feel and look like sunscreen when you first put it on, but it absorbs pretty quickly. My choice in the summer is Neutrogena-Spectrum + Advanced Sunblock Lotion SPF 100 +. You can tell by the "100+", mama don't mess around.

Night:

Cleanser: Lazy nights- Neutrogena Make-up Cleansing Towelettes Refill. If I'm too tired to do the whole skincare routine, I use these wipes. These wipes don't burn my eyes, and they thoroughly remove all my makeup. Don't buy the ones in the box. They're more expensive, and yeah, they're more expensive. That.is.all. Non-lazy nights- University Medical Acne-Free Oil Free Purifying Cleanser on the Clarisonic brush. I can't tolerate benzoyl peroxide lotion on my skin, but do really well with this cleanser. I tried Proactive products in the past, and didn't like them at all. This cleanser keeps my pores clean and isn't irritating.
Treatment: I alternate 2 products at night. There's no rhyme or reason. I usually use what's in close proximity. Most often I use Retin-A Micro pump in 0.1%. As you may know, this is available by prescription only. The second treatment I use is also doctor prescribed--Evoclin foam. This is a topical antibiotic (clindamycin) that I've had success with in the past year.

There you have it....my basic skincare routine. It may seem a little complicated, but essentially it involves cleansing plus 3 quick products in the morning, and cleansing plus 1 product at night. For only a few minutes 2x a day, you can make a big difference in your skin.

Let's Talk About Skincare

I've had a few of you "youngins" ask me about my skincare program and what supplements I take. I did a post in the past about my skincare products, but I've changed it up since then. I think it's important to periodically make changes to your skincare routine. I have some "tried and true" Holy Grail items that I'll never give up, but if I start having breakouts, you better believe I'm going to pull out the big guns.

So first, let me preach a little. No amount of products, peels, supplements, or jugs of water are going to give you changes in your skin if you tan or smoke. Those two habits are going to age you faster than anything, and it's often irreversible.

Friends, you have to stay out of the tanning beds and sun! I cringe when I see a beautiful 20-year-old fried to a crisp, all red-faced with legs as dark as cedar siding. Throw in some "weekend" smoking, and you'll have this.

The Extras: This will include what I use to treat breakouts and problem areas. I'll also talk about the "big guns" of skincare.
The Quirky: You may say "What the Helena?" when I tell you some of the crazy things I use and do for the sake of anti-aging and acne control.
Supplements and Food: I'll share with you what supplements I regularly take, along with foods that have improved my skin.

Bright Lips For Spring

I sang the praises of my favorite lipgloss, Loreal Infallible Lipgloss in "Sunset" here. I'm wanting a little something brighter for the spring and have seen lots of coral and fuchsia lipstick featured in all the fashion magazines. I want to try the brighter look, but want to avoid looking like this.

Last week's Sephora finds are the perfect compromise. I'd never tried "Korres" brand cosmetics, and stumbled across their Lip Butter Glaze. I love the fact that it contains no sunscreen (burns my lips), parabens, or sulfates.

I bought 2 tubes--the colors "Quince" and "Pomegranate". I am in love with the texture and color of this lip glaze. It's more opaque than a gloss, and it's the most moisturizing product I've ever had on my lips.

(I've already started doing coral on my nails.

It's OPI "Cajun Shrimp".)

The only downside: This isn't a long-lasting lip color. It's moisturizing & it's a gloss, so don't expect to have lunch and still have color on your lips.

My favorite bright coral lipstick of all-time is Tom Ford's "True Coral". The lipstick container is unbelievable. I bought this color last summer based upon reading Temptalia's wonderful review. Two problems-it's expensive ($45 a tube!) and.....I can't find my tube. I love it so much that I plan on ordering another tube if my old one doesn't show up soon. "True Coral" is a longer lasting lip color, and I'm anxious to try my Korres "Pomegranate" gloss on top of it.

For some reason, ~~79 straight months of snow~~ I'm really excited to wear yellow for spring. However, with red hair, I can't wear full-on sunshine yellow. My best bet to not look like "Daffodil Debbie" is to incorporate "pops" of yellow into my spring wardrobe.

Smokey Vegetable Quiche

I have a thing for quiche. It's my absolute favorite thing to have for breakfast. Is it healthy? Um, not my version. My goal is to work on my recipe to lower the fat and calories. Enjoy!

Smokey Vegetable Quiche

*makes (1) 9 inch and (1) 8 inch quiche

Ingredients:

1 package Pillsbury refrigerated pie crust
3 pieces of smoked bacon
1 onion, finely chopped
1 red bell pepper, finely chopped
8 oz fresh spinach, washed
3/4 cup cherry tomatoes, washed and quartered
1 can of artichokes, (not in oil)-drained and chopped
8 oz light sour cream
1/2 cup half and half
1/2 teaspoon chipotle pepper powder (in the spices' aisle)
7 eggs
1 tsp baking powder
8 oz of Swiss or cheddar cheese
1/2 teaspoon salt
1/2 teaspoon black pepper

*You can omit the bacon if you want to make this dish vegetarian. Simply use a tablespoon of olive or vegetable oil to saute the vegetables.

Directions:

Preheat oven to 400 degrees.
Unroll pie crust and place in a 9 inch pie plate. Press edges and prick bottom of crust with a fork.

Place crust in oven and bake for 10 minutes. Don't expect it to be brown.
Place bacon in a skillet and cook over medium heat until done. Be careful not to burn.
Put cooked bacon on paper towels. Keep the bacon grease in skillet to cook onions, red peppers, and spinach.
Add chopped onions and peppers. Continue cooking until done.
Add spinach and cook until it is wilted and all liquid is cooked down.

Whisk together eggs, half and half, sour cream, chipotle pepper powder, and baking powder. Don't use a hand mixer for this.
Add Swiss cheese to mixture.

Fold in spinach, onions, and red peppers.
Add tomatoes and artichoke hearts.
I use one piece of crumbled bacon. Add all 3 pieces if you want.
Pour egg and vegetable mixture into pie crust.
Don't overfill. **This recipe makes enough for one 9 inch and one 8 inch quiche.
You can also prepare these crustless in ramekins sprayed with cooking spray.
Carefully place in preheated over and bake for 20 minutes.
Turn oven down to 350 degrees.
Remove quiche from oven, and place strips of aluminum foil around edges of pie crust to prevent over-browning.
Return quiche back to oven and bake for about another 20-30 minutes or until the center is set. (If it wiggles, it's not done.

Slacky Slackerson

Lately, I have lost all interest in blogging.

Sure, I can try to round up some fashiony-type blog posts,

or I can whip up a recipe to photograph.

But.......

Quite honestly, that's not what I had intended to do when I started blogging.

I hoped that I could share more of "me".

That's scary though.

The few times I've put myself out there, I've been judged.

More often, I found acceptance.

So for now, I'll just give you a "brain-dump" of what's happening in my life.

I've been really busy with trying to get the yoga training completed.
I taught my first two "real classes". The kids were wonderful. I LOVE teaching.
The weather here is STILL wacky. We had snow just last week. Two days later, it was 70 degrees.
Parent-Teacher conferences went well.
We still don't know where we're going for Spring Break. It may end up being a "staycation".
I'm in love with "The Republic of Tea" brand Daily Green Tea in the Ginger Peach flavor. So good!
I've found a wonderful Vietnamese restaurant that I plan on frequenting weekly. The tofu/veggie spring rolls are so yummy!
My skin has gone cuckoo. Breaking out again. Derm appointment tomorrow. He'll ask "Have you been stressed?" I'll say "Yes."
I ordered some cute yoga clothes from Athleta using the Give and Get 30% off coupon code. My current work out clothes won't cut it.
Sassypants brought me this when I asked her to bring her dirty plate to the sink for me to wash. So sweet!

Bookworm is making a musical instrument for school. Doc helped her cut out the wood, but she's doing the rest. It should be done by today.
I'm trying to figure out how to be a part-time working mom. I really need a sister wife. HA!

That's pretty much it. I can't complain, but I'm also not feeling like myself right now. I know the weather has a lot to do with what's going on with my energy level.

Yes, I eat relatively healthy, and work out with a trainer 3 times a week. Yes, I will be teaching yoga to kiddos. But.......I had a first-time breakfast request this morning from Sassypants. She came up with this combo all by herself.

Pancakes with grated semi-sweet chocolate,

real butter, bacon, and maple syrup on top.

Do you feel your arteries clogging?

We WILL be taking a walk or bike ride on the trail today. HA!

Yoga Muffins

Last week I completed my yoga teacher training for children. It was an intense week. You say, "Yoga is intense? Yeah right.", but we were there for 35 hours for actual classes, hands-on training with children, and classroom time. We had a wonderful "snack fairy" bring us snacks two times a day. There's something so wonderful about eating fresh, organic foods that others have prepared, right?

All us students went crazy over these wonderful muffins, and I'll forever call them "Yoga Muffins" because they bring back memories of such a wonderful week.

These muffins are adapted from this recipe.

Yoga Muffins

Makes 16-24 muffins

Ingredients:

1.5 cups Whole Wheat Flour
3/4 cups Flaxseed Meal
3/4 cup Oat Bran
1/4 cup Brown Sugar
1/4 cup + 2 tablespoons Splenda
2 teaspoons Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon Salt
2 teaspoons Cinnamon
1.5 cups Grated or Finely Chopped Carrots
2 whole Apples, Peeled, Cored and Chopped
1/3 cup Raisins
3/4 cup chopped Pecans
1/4 cup Organic Agave Nectar
1/2 cup Milk
2 Whole Eggs
2 teaspoons Vanilla
1 teaspoon Raw Sugar to sprinkle on top

Instuctions:

-Preheat oven to 350 degrees.

Mix all dry ingredients together in a large bowl, making sure to break up lumps of brown sugar.
Add carrots and apples. Note: I peeled the carrots and put them in the food processor, but finely chopped the apples by hand. Otherwise, the apples can end up too "liquidy".
Mix in raisins and nuts.
In a small bowl, mix the wet ingredients together-agave nectar, milk, eggs, and vanilla-and pour into the dry ingredients bowl.
Mix well.
Start by putting 16 muffin liners in a muffin pan. Spray one spray of cooking spray just in the bottom of the liner. The muffins have no oil in them, so they really stick to the paper.
Fill each liner up almost to the top. They don't rise like typical muffins.
If you have batter left over, add more liners & fill. I was able to get 16 muffins filled to the top.
Bake 15-20 minutes.
Immediately after removing from oven, sprinkle raw sugar on top of muffins. It gives them a nice, sweet crunch.

**Once cool, store in the refrigerator in a Ziploc with a paper towel to absorb moisture. They will go rancid quickly, probably because of the flaxseed meal.

**They freeze beautifully.

Since having children, my husband and I don't celebrate Valentine's Day in the "traditional" way. You know, getting all dressed up and going out to an overpriced dinner. Our Valentine's Day is usually low-key and this year was no different.

Doc sang at church this weekend, so things were a little fragmented with him being gone so much. We decided to pick up dinner Saturday night from a great local restaurant that did a V-day special. They offered 2 filet mignons, a lobster tail, twice baked potatoes, and green beans--followed by the best chocolate truffles EVER. YUM!

Yesterday, I helped with the girls' Valentine's Day parties at school. I made these heart shaped sandwiches and heart smokies.

But here's my favorite part of Valentine's Day-

Hubby came home from work with this......

He didn't buy this for the girls to just play with, but for him to do mani/pedis on them.

If you knew what a "manly man" he is, this would melt your heart as much as it did mine. This was all his idea, and I have to chuckle when I think of him scoping out the nail polish aisle.

He told me to go take a hot bath (rare once you have kiddos), and he spent the next hour and a half painting their fingers and toenails. He did designs and added stickers and glitter.

What a daddy and what a husband!

I just had to brag because I'm so blessed!

Penne Pasta with Chicken in Sun-Dried Tomato Cream

**Disclaimer: This is not a "healthy, frolic in the low-fat meadows" recipe. In fact, it's an indulgent, "I want to impress somebody" recipe. There's very few ingredients in this, but there's oh, so much flavor.

I serve it as pictured for guests, but for us, I just mix the pasta and sauce into one pot. It's not pretty, but the pasta takes on the cream flavor and I think it's better all mixed together.

You could make this without the chicken for a vegetarian version. It's just as good!

Penne Pasta With Chicken in Sun-Dried Tomato Cream

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
10 oz. jar of sun-dried tomatoes packed in oil
8 cloves of garlic, finely minced
1.5 cups of white wine
1/2 pint of heavy whipping cream
1/2 cup half and half
salt and pepper
1 lb of penne pasta
Approximately 1/2 cup Parmesan cheese (shaved or shredded)
1 small bunch of fresh basil leaves

Directions:

Using a fine mesh colander, drain sun-dried tomatoes, reserving oil.

Place the sun-dried tomatoes on a paper towel, and roll up to remove excess oil. Leave wrapped.

Salt and pepper chicken.

Measure out 1.5 tablespoons of the reserved sun-dried tomato oil. Heat oil in a large skillet on medium-high heat.
Add chicken to skillet.
While chicken is cooking, add sun-dried tomatoes to small food processor.

Pulse until finely minced. You can also do this by hand if you don't have a processor.

Continue cooking chicken until done. There may still be liquid left in the pan. No biggie.

Add garlic and stir for about 30 seconds. Be careful not to burn or overbrown garlic.
Add white wine, minced sun-dried tomatoes, heavy cream, and half and half to chicken.
BTW, I used a wonderful local wine.

Stir and bring to a boil.
Reduce heat to medium low and cover. Simmer for about 15-20 minutes, stirring occasionally.

While chicken and sauce are simmering, cook penne according to directions. Drain and put aside.

When sauce has reduced, you'll notice it takes on a rich, creamy red color.

Stir in a handful of Parmesan cheese.

Add salt and pepper to taste.
Put a serving of penne in each bowl and spoon chicken and sauce over it.
Add basil and top with Parmesan cheese.

I don't have a titillating blog post in the works, so I'll share a few nuggets of "This and That".

I survived the Great Blizzard of 2011. We had an estimated snowfall of 20". Insane, right? The kiddos were out of school for 4 days, so it was a challenge keeping them occupied from Tuesday until Saturday. Have I mentioned that I'm ready for spring?
I did A LOT of cooking last week. I made a sweet Russian friend's rice, celery, green onion, radish salad. It is so yummy. She was the one that won 1st place at our Christmas get-together. The flavor is so refreshing. It reminds me a little of a light pasta salad.

I will be training at the beginning of March to be a "Yoga To Grow" certified teacher. It's an intense week long (35 hour class) and when finished, I'll be able to teach yoga to children. I am SO excited. This is such a great opportunity for me to share my love of yoga with little ones.
I am loving Archer Farms "Black Pepper and Sea Salt" chips from Target . I may or may not have eaten a couple of bags this month.

Hubby and I finally got to go out on a date night last Saturday. Boy, did we need it after being cooped up all week! It's amazing what having an uninterrupted dinner and conversation can do for your marriage. A big ol' steak doesn't hurt either.
I made a visit to Marshall's and bought these colorful scarves. I'm really tired of all the black, gray, and brown I've been wearing. What better way to inexpensively add some color to an outfit!

I've been eating horribly for the past few weeks, so after a friend's recommendation, I ordered the Arbonne brand "Detox Spa 7 Day Body Cleanse". I just started today, so I'll let you know how it goes. I've done another supplement cleanse, and let's just say...I was wrecked. This one is supposed to be less intense. This kit includes 7 small bottles that you add to water & drink throughout the day. The ingredients include a "Full Body Cleansing Blend" and a "Superfood Antioxidant Blend". I bought mine unused and sealed (of course) on eBay from an Arbonne dealer. So we'll see how it goes.

Pimento Cheese

On sesame Melba rounds

Yesterday, I asked my Twitter friends if they had a good pimento cheese recipe. I got great responses, especially for Samma's pimento cheese. You have to go check out this recipe. It's next on my list. I'm snowed in, and didn't have any jalapeños.

So after sifting through many recipes, I decided to make Bobby Deen's (you know....Paula's son ) Pimento Cheese recipe. Like ALL recipes, I made some changes. Here's my version.

Pimento Cheese

Ingedients:

(1) 8 oz block of Sharp cheddar cheese *NOT pre-shredded
(1) 8 oz block of Monterey Jack cheese *NOT pre-shredded
3 oz of cream cheese (room temp)
About 1/3 cup mayo or more if desired
2-3 teaspoons of jarred pimentos, (drained & smashed with a fork)
1 teaspoon freshly grated onion
1/8-1/4 teaspoon of salt (more or less according to taste)
1/8 teaspoon of garlic powder
Fresh cracked black pepper

Directions:

With a hand grater, grate both cheeses into a medium sized bowl.
Add cream cheese and mayo. Lightly blend.
Add pimentos and onion.
Add salt, garlic powder, and desired amount of fresh cracked pepper.
Thoroughly blend.
Chill for a few hours. It has a firmer consistency.
Serve as a sandwich or on crackers or vegetables. The possibilities are ENDLESS!

*I am the queen of "sneaking" fruits and vegetables into my family's food. Guess what I did yesterday? I shredded some carrot & put into the pimento cheese. You should try it. It adds a nice sweetness & crunch. Shhhhh. Don't tell them.

I've Got a Thing For Leather

Maybe it's the 80's rocker chick in me (yeah, you read that right), but I've always LOVED leather clothes. Not just jackets or shoes. I like tops, dresses, pants, and if you recall in this post....I like leather shorts.

Remember the episode of "Friends" when Ross wore leather pants? The bathroom scene with all the baby powder is classic!

Kelly Ripa's Dress From Intermix

I think Kelly Ripa is cute as a bug. I want to feed her some good Southern food to give her some curves, but I admire how dedicated she is to fitness.

I love watching Kelly's "Fashion Finder" series on the "Regis and Kelly" website. She does a quick segment after the show, where she highlights her outfit of the day. Kelly had on an adorable dress this past Wednesday, so I rushed to look on "Fashion Finder" to find out the designer. Here's the segment (you'll have to scroll to Wednesday, January 26 to see it.)

Turns out this is an exclusive dress for Intermix, and it isn't cheap--$238. But if you sign up for their emails, they'll send you an automatic 15% off your first order. That brings the price down to $202.30.

You can't really tell by the picture, but you get a real feel of the fabric's flowiness on Kelly's video. I think it's such a versatile dress and is perfect for all seasons.

Texting and Driving

I've done it. We've all done it. We've read, sent, or typed a text while driving. How many times have you been at a red light when it turns green, and the person in front of you is in "zombie mode" texting & and you have to honk your horn for them to go? How many times have you been texting and slammed on your brakes in the nick of time before you rear end the car in front of you? I have no judgment, because in the many years I've had my cellphone.....I've done it too.

This video is eye-opening and heart breaking. It's not the gruesome one that was shown a few years back. It's true stories of people whose lives were changed because of texting.

Please take a few minutes to watch this video. And most of all, please don't text while driving.

My prayers and thoughts go out to all the people in the video, especially the families that are living with the loss of a loved one.

Things I'm Loving Right Now

I'd love to share with you a few items I've discovered in the last month.

Philosophy "Amazing Grace" Body Butter

I bought this at Sephora. It smells so clean and even though it's extremely moisturizing, it doesn't feel greasy.

These are individual pads (think Stridex acne pads) that contain alpha, beta, and gamma acids along with peptides and vitamins. You wash your face, and swipe the pad all over your face and neck. After a minute or ten (I have resilient skin), you simply rinse.

This isn't a miracle product, but I love how convenient and quick these are. I noticed that my pores are cleaner & my overall skin texture is smoother.

John Masters Organics Shampoo and Conditioner

I have been experiencing hair loss pretty badly the past five years. So much so, that I'm now regularly using a Rogaine/Latisse combination daily. I also take biotin and multivitamins along with silica and other supplements.

Hair loss, especially for women, is utterly devastating. It's not supposed to happen to us! In addition to the mentioned treatments, I've been doing a lot of reading on hair loss, its causes, and ways to prevent it.

One of the interesting things I recently read is how a hairdresser noticed the amount of hair loss she had been seeing in women in the past 10 years. After doing years of research with medical professionals and scientists, she saw a direct correlation between sulfates in shampoo and hair loss. Here's the article. Check out that website. It's very informative.

Not all sulfate-free shampoos are created equal though. I utterly HATE Pureology shampoo. I know a lot of you love it, but for my hair, the pH is off. That's why my hair looks like a wad of straw when I use it. Then I have to use 2 gallons of conditioner to get it to detangle. Then it's flat. Major fail.

The thing I love about John Masters' brand is that he's done extensive testing on the pH of all his hair products. After washing/conditioning my hair with the above products, my hair feels clean, strong, & silky.

I've also noticed that I'm not getting GOBS of hair in my hands when I wash it.

Do any of you use sulfate-free shampoo? Are you using it to protect your color or highlights or for other reasons? Just curious.

With all the snow we've had lately, I've been trolling all the spring fashion that is popping up online. I've noticed that designers are presenting every type of floral print imaginable. There's sweet florals on silk chiffon tops, and bold, abstract botanicals sprawled across edgy dresses.

Sure, the floral print trend is nothing new for spring. We see it every year. But I'm super excited to see all the different interpretations. Here are a few pieces that I'm diggin'.

Swiss Almond Chicken Salad

This is a recipe that I've been making for quite a few years now. The combination of flavors in this chicken salad recipe is complex and unique. You get the creaminess of the Swiss cheese combined with the hint of almond and the sweetness of the grapes.

We love to eat Swiss Almond Chicken Salad on Earth Grains brand "Honey Wheat Berry" bread or open-faced on a bagel. This would be a lovely recipe to serve in butter lettuce cups for a brunch or ladies' luncheon.

As with any "salad" recipe, not all measurements are precise. If you feel like it needs more moisture, add a dollop more of mayo.

Swiss Almond Chicken Salad

*This makes a pretty big batch. We like to eat it for a few days;-)

Ingredients:

(2) whole rotisserie chickens-using the breasts, skin removed & chopped or shredded
(3) stalks celery, finely chopped
1/2 cup green onions, chopped
3/4 cup sweet purple grapes, chopped
1 slice of mild Swiss cheese, chopped or run through the food processor
1/2 cup salted almonds, run through food processor- ( I also like to toast unsalted almonds for a nuttier taste, then just add a tad more salt later)
3/4 cup to 1 cup of Mayo
Salt and pepper to taste
Bread or lettuce for serving

Directions:

In a large bowl, add chopped chicken breasts.
Add celery, green onions, and grapes.
Lightly blend together.
Add swiss cheese and almonds.

Next add mayo.
With a spoon or plastic spatula, blend all ingredients together.
Add salt and pepper to taste.
Serve on your choice of bread, bagel, or lettuce cup.
